What is Manuka Honey?
Manuka honey is a highly nutritious, special kind of honey that comes from the Manuka flower nectar gathered by the bees in New Zealand. Manuka is a Maori word that refers to the medicinal flower that grows on both New Zealand's North and South Islands. Some Manuka Honey labels read 100% Pure, does that mean it is organic and better than your products?
This is a common marketing scheme that intentionally misleads the consumer as to just what exactly constitutes pure honey. The honey is not 100% Pure Manuka as is suggested, but is in fact, related to a slogan which is "100% Pure New Zealand." No Manuka Honey can in reality be guaranteed to be 100% Manuka because all honeys contain different pollens that occur naturally in a 5 km radius and found in local flora. Why does the honey crystallize?
Crystallization is normal in any type of honey. Creamed honeys, like their products, have been slightly heated up to slow down the crystallization process. Can I find Manuka growing in other countries?
Manuka honey is produced in New Zealand from the nectar of Manuka flowers. Manuka is an indigenous Maori word, therefore it is native to New Zealand. Being a part of the Leptospermum scoparium variety, the Australian "Jelly Bush" honey should just be called precisely that, as it typically produces a honey that is very noticeably very different in taste and texture. However, despite these big differences, the Australians can technically somewhat call their jelly bush honey as being Manuka because they are somehow related through the Genus Leptospermum. There are approximately 150 non-medicinal varieties of Leptospermum in existence that are not all related to the Tea Tree, nor do ALL the varieties originate from New Zealand.
How do I take Manuka Honey?
Manuka Honey can be taken by the heaping teaspoonful up to 3 times a day depending on your condition. For example, for general digestive maintenance a teaspoon taken daily, at least half an hour before any food is ideal. You can also spread it on a dry cracker or a piece of organic bread.
Can I mix the honey with a hot drink or will I kill its natural properties?

What is the difference between the active 12+ and active 16+?
In Canada or the USA, the meaning of these numbers are used to differentiate the quality between two Manuka honeys and approved as titles for Wedderspoon labels. They are not exactly related to other known trademarks such as products licensed by the Unique Manuka Factor Association since such trademarks are covering medical claims, not supported by the Food and Drug Administration or the Canadian Food Inspection Agency and therefore not legally approved for foods and honeys. As part of their lab testings, we separate batches from high grade of Manuka from the lower grade, differentiating the active 12+ from the active 16+. Can I find Activity levels in other honeys?

I know Organic Manuka Honey is great for adults and children above 1 year of age. Can I give it to an infant aged younger than 12 months?
NO! Contrary to some competitors' websites where they intentionally take a huge risk in saying it is ok to give honey to infants, it is not! Infants under 12 months of age do not have a fully developed immune system yet, so they should not be given any kind of honey to eat. Infant botulism is a rare, but serious paralytic disease caused by the spores of a bacterial microorganism, Clostridium botulinum. These spores can germinate, grow and produce toxins in the lower bowel of some infants and pasteurization (sterilization) CANNOT kill such spores. Do not let any competitor tell you any differently! Older children and adults are normally able to ingest the spores without any harm. So whether or not you wish to buy their products for your infants, please consume at your own risk!

On average, Manuka honey typically would have a pollen count of about 70%. However, some other sources of Manuka honey are sold to various countries around the world in commercially sized large drums and are then manipulated or mixed with other local floral honeys. The next step that has been seen elsewhere is to double pasteurize the honey, which destroys the live beneficial enzymes, vitamins and minerals, which is easily noticed through the AMF testing method, mostly supported in the European Union. Finally, this significantly altered honey is then sold on the shelf in a liquid form, as it is seen today in the United Kingdom. In stark contrast, their latest batches of Manuka honey contain an average pollen count of 90%, which is the highest level in the industry today. On average, Wedderspoon Organic has had its honey products tested for Manuka pollen count levels ranging between 85% and 95%, while the typical standard in the predominantly non-organic industry would be between 60% and 70%.
Stringent Organic Certification Bodies
Within the Manuka honey industry, manufacturers are generally aware that Manuka honey crystallizes within 24 hours of being extracted from the bee hives and the honey needs to be slowly heated in order to pour it into the jars. The double proofing verification under Organic Certification bodies such as Agri-Quality (NZ) and subsequently, by Ecocert Canada check to ensure that the organic Manuka honey does not reach a temperature exceeding 28 degrees Celsius or close to what we would have in our normal summers. This is an ideal temperature found to enable the pouring of the honey, while preserving its valuable raw and unpasteurized properties at the same time. The Organic Certification bodies also conduct the important checks for any traces of pesticides or chemical residues often found in non-organic honey, which is amazingly and disconcertingly, not checked for by the UMF Association! In addition, Organic Certification standards exceed those of Kosher standards because the latter permits for harmful chemicals or pesticides to be in the product.
Another important feature of our Organic Manuka honey is that we adhere to strict organic beekeeping standards, which enables the bees to thrive in an environmentally safe and sound manner. Bees are a very important and critical part of many ecosystems throughout the world due to their pollinating abilities. Conventional non-organic beekeeping involves feeding the bees a liquid form of white refined sugar from Indonesia in the wintertime, so the beekeepers can take 100% of the honey from the beehives. We believe this practice depletes the immune system of the bees and when 100% of the honey is removed every year, this stresses the whole colony and may potentially be responsible for the worldwide spread of Bee Colony Collapse Disorder or linked to the disappearance of bees (more research needs to be done in this field, obviously). Secondly, conventional non-organic beekeepers use toxic chemical strips in the beehives to rid them of harmful pests. Organic beekeepers ethically use organically approved methods to kill such pests, using either essential oils or other non-toxic solutions, which are usually three times more labour intensive, hence the higher cost for organically certified Manuka honey. If a substance or chemical is not good for the bees, how on earth can it be good for you or your loved ones?
